I also added some spinach, chopped tomatoes, and avocado. I used a 14oz can of chickpeas (it equaled a bit more than the cup called for in the recipe), and found that there was barely enough falafel mixture for 4 servings. Maybe 1 cup of dried beans becomes much more when soaked? Either way, I’ll double the mix and use 2 cans next time so everyone can have as much as they’d like.

I also like the idea from another commenter of buying pre-made falafel and crumbling them. Target has some frozen ones that come with sauce, that would make this recipe super quick to pull together!!
